Around 1800, José Rose Pacas decided to explore the world of coffee and planted Bourbon Arabica coffee trees in the Apane Calamatepec mountains. In 1905, his descendant, Alberto Pacas, discovered a natural mutation in some of the trees on his plantation. The newly discovered mutation met all the criteria of a fine-flavored coffee: rich in flavor notes of apricot, hazelnut and cocoa beans, with low acidity and a sweet, persistent aftertaste. To this day, Pacas' coffee fascinates coffee lovers all over the world. The chocolate base, which is matched to the coffee beans, is made from an original blend of cocoa beans from a small farm.
